Description

Produced from the pink and purple blossoms of wild autumn heather, this highly sought-after variety is a masterpiece of nature, harvested in limited quantities only when the fickle autumn weather allows. The plant relies heavily on delicate seasonal rain to secrete nectar, so production is notoriously unpredictable.

Fast crystallisation is a primary indicator of genuine, unheated heather honey. Don’t let the solid state fool you—its spreadable, buttery texture is highly prized by gourmet chefs. Bold, dark, and intensely aromatic, it offers deep toffee undertones and a lingering bittersweet finish.

Our honey varieties are sealed by hand without the use of machines in the standardisation process. A piece of useful information for consumers is that unheated/unpasteurised honey crystallises at some point. Crystallisation is a natural process. If you want to restore the honey to a liquid form, use gentle heating (immerse the jar in warm water at a temperature of about 40°C for a few hours). Avoid microwaves.
