Pairing: Oregano is the emblem of Greek and Mediterranean cuisine in general. With its spicy taste, it blends perfectly with the extra virgin olive oil and lemon. Many dishes in Greece are served or cooked with this simple sauce, such as goat, fish, potatoes, liver, feta, and even boiled zucchini. Oregano in many islands of the Cyclades and the Dodecanese is added to the bellies of grilled fish to flavor them.
